This was actually a pretty easy crack to find. I found myself poking around at the app files, and was checking if the I could find the high score registry. I did after not too long, and thought it was extremely easy.
1- Go to var>mobile>applications>1010!
2- Once you are in the apps folder, go to Library.
3- Go to Library>com.gramgames.1010.plist
4- Open that file with Property List Viewer.

5- In the first string (bestScore) you can change your high score to anything you would like.
6- Close 1010! from multitask, and when you re-open the app your new high score should show.
